Whether you do a special dinner for all eight nights or just one, we asked our South Shore food-loving friends at Seasoned & Salted and Clandestine Kitchen to share a Hanukkah-friendly appetizer and entrée recipe that will wow your family.

The Best Goat Cheese Crostini with Caramelized Onion

Ingredients:
1 baguette sliced into 1/2-inch rounds
2 tablespoons olive oil
2 tablespoons butter
2 cloves garlic minced (for brushing the bread)
8 ounces goat cheese softened at room temperature
1 tablespoon fresh thyme finely chopped
1 tablespoon fresh rosemary finely chopped
1 teaspoon lemon zest
2 large onions thinly sliced
1 tablespoon olive oil for cooking the onions
2 tablespoons balsamic vinegar
1 teaspoon sugar
1 teaspoon salt divided
1/2 teaspoon freshly ground black pepper
Method:
Prepare the Crostini:
1. Preheat your oven to 375°F (190°C).
2. Arrange the baguette slices on a baking sheet.
3. In a small bowl, mix 2 tablespoons of olive oil with the minced garlic and melted butter. Brush both sides of each baguette slice with this mixture.
4. Bake for 8-10 minutes, flipping halfway through, until the crostini are golden and crispy. Set aside.
Make the Herb-Infused Goat Cheese:
1. In a medium bowl, combine the softened goat cheese with 1 tablespoon of fresh thyme, 1 tablespoon of fresh rosemary, and 1 teaspoon of lemon zest.
2. Mix until well combined. Set aside.
Make the Balsamic Caramelized Onions:
1. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
2. Add the sliced onions and cook, stirring occasionally, for about 15-20 minutes until they become soft and golden.
3. Add the balsamic vinegar, sugar, 1/2 teaspoon of salt, and pepper. Stir well and cook for another 5-7 minutes until the onions are deeply caramelized.
4. Remove from heat.
Assemble the Crostini:
1. Spread a generous layer of the herb-infused goat cheese on each crostini.
2. Top with a spoonful of the balsamic caramelized onions.
3. Garnish with a sprinkle of fresh thyme and rosemary, if desired.

Herbed Salmon with Capers & Citrus

Ingredients:
2 6oz salmon filets (deep-skinned)
2 Tablespoons Fresh herbs, finely chopped (we recommend using dill, parsley and basil)
Sea salt and black pepper to taste
1 tablespoon extra virgin olive oil
2 tablespoons capers
1 clove garlic, minced
2 tablespoons lemon juice
1 tablespoon lemon zest
2 tablespoons lime juice
1 tablespoons lime zest
2 scallions, chopped
Method:
1) Preheat the oven to 375°F.
2) Lightly rub salmon filets on both sides with herbs, salt and pepper and place in a baking dish or on a prepared sheet pan.
3) Bake for 14-15 minutes until the salmon is cooked through.
4) Meanwhile in a small bowl, combine olive oil, capers, garlic, lemon juice and zest, lime juice and zest, and scallions.
5) Remove salmon to serving dish or dinner plates and top with caper and citrus mixture
PRO TIP: We recommend serving salmon with roasted asparagus and jasmine rice.
